Is it possible to have different in stock numbers for product for each sales channel by default in shopware?
Are there any such plugins?

This function is currently not implemented.
A plugin for multiple stocks is also not available yet.
You can do this by coding or check if a shopware 5 Plugin is going to be available for shopware 6 soon.
