Nach dem Update auf 5.6.6. habe ich z.B. beim Artikel erstellen immer Fehlermedlung: 500 -
Kann mir jemand weiterhelfen?

Bitte nicht mit Shopware Log verwechseln. Liegt meist außerhalb vom httpdocs-Order der Domain - ggf. beim Hoster anfragen.
Also, schau mal bitte was du da so findest.

Backend Log sagt: Während des Speicherns ist ein Fehler aufgetreten:undefined
Log File auf war vom 9 März, der Fehler ist aber am 12. März geschehen, somit ist es nicht dort wo ich suchen sollte?
Ein 500 - Fehler ist anscheinend ein PHP Fehler vom Server?

Hast Du Shopware und Magento in einer Datenbank?
Magento ist auch auf dem Server, aber eigentlich sollte die Datenbank nur für Shopware sein.
Vorhier lief es, erst seit dem neuen Update kann ich keine Produkte mehr hinzufügen…
Das scheint ein Fehler zu sein, den in der Browserkonsole suchen müsste. Klicke Dich da mal durch.
